Chicken Little

Could it be that poor Chicken Little has it all wrong... again? Perhaps this time the sky really IS falling, even if it hasn't hit you on the head... yet. The sickness in our environment is matched by the sickness in us. Both suffering from a toxic overload of too much. Too many chemicals and additives. Too much activation of our natural, but so often ill-used appetites. Too much consumption.
One part of the solution, so often overlooked, is the choice we have to participate. It turns out that the choice that is best for the planet is also the choice that is best for each of us, personally - at least when it comes to what we choose to eat.
The apocalypse diet is devoted to my own exploration of this optimal diet - one that is entirely plant-based, and avoids oils and processed or refined foods as much as this foodie will tolerate :-) I will blog along the way and will share my recipes.

Lemon basil hummus

There is nothing like hummus on a good piece of bread, or as a dip with crackers or fresh veggies.  But store bought hummus can be full of refined oils, preservatives and additives.  Yuck.

Here is a recipe that is simple, flavorful and replaces all of the usual oil with whole cashews.  Cashews are obviously not low fat, but the fat comes with nutrients and fiber that are completely removed in processed oils.  And they taste really good.




In a food processor combine all of the following ingredients:

juice and zest of one lemon
one can of garbanzo beans (chickpeas), rinsed and drained
a big handful of raw, unsalted cashews
       (pre-soaking these in water for a couple of hours before using will make them creamier)
fresh basil leaves to taste - I like a good, packed cupful
one clove of garlic
salt and pepper to taste

Whiz the ingredients until the hummus is smooth and creamy.  Unused can be stored in a jar in the fridge for up to a week.
